Courageous contrasts - you will be able to taste one of the most controversial, but in our opinion, the most outstanding taste compatibility - bitter chocolate and Beluga caviar.
Science and art on the tongue
Food scientists have found that both caviar and dark chocolate contain similar molrecas of the trimethylamine group. In nature, products with a similar chemical profile form the perfect synergy – just like strawberries with champagne or cheese with honey.
This extraordinary union was once popularized by the kitchen scientist and British chef The Fat Duck, but today this combination has become the legendary business card of the Parisian Bruno Verjus. At his restaurant Table, which ranks at the top of the list of the world's best restaurants, caviar and chocolate dessert has become a cult object. It uses the natural salinity of caviar to lift the depth of chocolate into a new dimension, proving that the boundary between sweet and salty is just an illusion.

We emphasize that all the eggs offered at dinner have been obtained legally and ethically, strictly observing the fish spawning grounds. It is a pleasure that goes hand in hand with responsibility for natural resources.
